Interesting to see other opinions, particularly the association of green = wealth as I think growing up, it was the other way around. Salads as a meal wasn't normalised because culturally, meat = wealth and parents strive to provide for as much meat in a meal for nourishment.
At the moment, I'm lucky to have a little patch in my garden where I can grow enough vegetables to make my own salads. This has made me realised how much work truly goes into ensuring a harvest and makes me feel like vegetables at the grocery store etc. are way underpriced for the amount of labour that needs to go into it. At the same time, I agree that everyone should have access to nutritious food and am interested in exploring other forms of systems that can balance giving people such access with fair and sustainable agriculture.

Lex: Cost of operation is definitely what's gonna drive prices up, and I imagine because the world is so globalized shortages hit hard. It does feel really absurd how pricey some salads can be though from restaurants.

Ace and I just bought a house, and a garden is my goal eventually once we can get a few repairs taken care of. For some areas that have food deserts gardening probably would be the way to go, perhaps like a community garden?

I do believe this video has some great points. I believe it is good that people are starting to eat more salads because of the changes to people's mindsets about them, however, even with my own experiences, with costs, it can be insane. Whenever we look on our app for places to order, when you look at a place known for healthier food but their menu is all over $15 a meal, it's just not feasible. When you live on a limited income, seeing that much for a single meal has the side affect of often choosing less healthy meals. I do like in the video he mentioned a place that is gauging the prices of the meals based on the area that is being served. I would love to see more of that happening in other areas as well.
